Santo is sweet and gentle, and while the smoky and pepper are present, they’re dialed back to where even a mezcal novice could enjoy them. This isn’t a bad thing, as it allows notes of apple, caramel corn, and some ruddy carrot notes to come to the fore, which give it a savory bent.
