Samhae Soju is produced from rice, nuruk and water using a 108-day fermentation process brewed in three stages on the Day of the Pig each month. In Korean tradition, alcohol brewing begins on the lunar calendar’s Day of the Pig during the coldest months for slow fermentation, with the first stage in January and nuruk preparation in February. The Day of the Pig is believed to promote purity, as pig’s blood is seen as clean and clear. The spirit is then distilled once in a traditional pot still to 45% ABV without dilution. Notably, Samhae Soju is designated an Intangible Cultural Heritage of Seoul.
