Saint Benevolence Rum Clairin is crafted at the Dorcinvil Distillery, a third-generation family operation in Saint Michel l’Attalaye, Haiti. Made from indigenous cane clones (Madame Meuze, Cristalline, Farine France and 24/14), it's distilled in a handmade Creole pot still. The sugar cane is hand-harvested from surrounding fields and fermented with wild yeasts for 5 to 7 days. Some of the juice is reduced to syrup and fermented in the local Methode Saint Michel style in homage to Saint Michel. The resulting fermentations are distilled separately before being blended and bottled at 100 proof.
This is not going to be for every rum drinker – it’s certainly not your average white rum or even rhum. Definitely one for the more experimental enthusiast.
This is an explosion of flavours that are a little odd, but they work together – it is a Clairin from Haiti after all, don’t expect the usual profile of a rum or rhum.
All in all, really interesting, though perhaps not to everyone’s taste – it is, admittedly, something of a challenge to sample if one is not prepared for its rough and ready charms.
