Created by Henri-Louis Pernod in 1805 in Pontarlier, France, Pernod Absinthe is a cordial with a 136 proof and a bright green color. It is made using anise, wormwood, fennel, hyssop, melissa and other botanicals. When mixed with water, it turns lightly opalescent.
The mild fragrance shows fennel and a hint of juniper. Although the alcohol level is comparable to other absinthes, it seems to require more dilution to tone down the alcohol heat and tease out a faint sweetness.
