Pensador Ensamble Mezcal is made by Don Atenogenes García and his son José García in the Miahuatlán region of Southern Oaxaca, Mexico. It uses 70% Espadín and 30% Madrecuishe agave that are roasted underground for 5 days, crushed with a horse-drawn tahona, fermented and double-distilled in copper pot stills. It's bottled at 48% ABV and typically sells for around $43-52.
