Produced in Santiago Matatlán, Oaxaca, Mexico, this Palomo mezcal is made from espadín agave, harvested at maturity, baked underground for five days, milled by a horse-drawn tahona and fermented with natural yeast. Double-distilled in copper pot stills, it is then adjusted to proof using the cordon cerrado technique.
