Produced in Santiago Matatlán, Oaxaca, Mexico, this Palomo mezcal is made from espadin agaves, baked underground for five days, milled by horse-drawn tahona and double-distilled. A third distillation follows a four-week maceration with Oaxacan coffee beans.
