Montelobos Tobalá is a joven mezcal produced in San Nicolás Huajuapan, Puebla, under the guidance of maestro mezcalero Aarón Alva and directed by Iván Saldaña. Crafted from tobalá agave, it is roasted in a conical underground brick pit oven fueled by encino and tepeguaje wood. After roasting, the agave is milled with a mechanical shredder and undergoes wild fermentation in open pine wood vats without added yeast or nutrients. It is then double-distilled in copper stills.
