Produced at Ireland's Midleton Distillery, this single pot still whiskey is aged in a combination of sherry and American barrels, and finished in French chestnut casks.
The taste is spicy and warming with notes of clove, allspice, roasted chestnuts, and a hint of maltiness while turning drier leading into the long finish. Gently fading spices and a nice oakiness are balanced by hints of black tea and honey as the whiskey fades away. Excellent!
It rolls out a thick red carpet of sweet spice, cinnamon, and clove, with more pot still weight than oak tannins. Move over Redbreast; my pick from this crazy, experimental Irish Distillers range.
The palate is clean and silky, but it’s got a raciness that stuffs tons of vanilla candies, mixed flower petals, and ginger-led baking spice into the palate. The finish starts to feel a little busy, but some sherry-driven grip gives it balance.
