Compared to the likes of tequila or even mezcal, the world of aged sotol is still finding its footing. Experimenting with the possibilities, Chihuahua-based Los Magos recently teamed up with Vermont's WhistlePig distillery for a 12-month entry aged in 10-year rye whiskey casks. The unexpected influences are heavy with this one. Let's see how WhistlePig's exceptional rye mingles with the terroir-driven bite of sotol.

Grassy, herbal, funky and loaded with cedar, diesel and a touch of allspice. Wild nose.
Thin to medium on the palate, full of lemon, citrus, lemongrass, pepper, cedar and a funky woodiness, a touch of chemical-y diesel.
Short to medium finish, smoky and ashy, full of chemical character.
This is really pungent and wild. It's quite sotol in profile but there's a good strong bit of chemical character here and a little showing from the Whistle Pig barrels. Interesting, but no all-star.
