Mezcal Legendario Domingo Durango Cenizo is produced by the Colón family in Nombre de Dios, Durango. It is made from Cenizo agave aged 10 to 12 years, cooked for four to five days in underground conical ovens using mesquite, oak and huisache wood, crushed with a mechanical wheel, naturally fermented for six to eight days in open wooden hollows with indigenous yeast and fresh spring water, and double-distilled in a 300-liter Arabic Alembic copper and stainless steel still. The mezcal rests 30 to 45 days before being bottled at 47% ABV.
