Koch El Mezcal Artesanal Ensamble de San Baltazar Guelavila is made from cirial, tobalá, tobasiche and lumbre agave species harvested from the wild in Oaxaca, specifically in the region of San Baltazar Guelavila. The agaves mature for 7 to 12 years before undergoing double distillation in copper alembic stills by Master Pedro Hernández.
