Beautiful, sweet, rich nose full of Bavarian cream, maple donuts, caramel, Luxardo cherry, blueberries, cinnamon and tobacco.
Moderate viscosity, with notes of butterscotch, a good bit of oak, cinnamon, gingerbread, a lovely huge cherry note and some licorice.
Oak and tannin follows onto the finish, followed by cinnamon, mint, peanut brittle, dark chocolate and watermelon candies.
I must admit, I'm pleasantly surprised by this. I had a chance to taste a small sample of Knob Creek 21 several months before release at the distillery, and at the time I found it to be tasty but a bit too oaky (unsurprising for a 21-year-old bourbon). The final, bottled result has more balance than I remember from that tasting (I'm unsure whether or not that was the finalized blend). It's undoubtedly very heavy on the oak, and for that reason it will not be for everyone. But if you enjoy an oak-heavy bourbon, this is an excellent one with rich flavors galore.
