Kilchoman Maury Cask Matured is a limited-edition Islay single malt Scotch whisky from Kilchoman Distillery, a family-owned farm distillery founded in 2005 on the Isle of Islay. It is the distillery’s first release matured entirely in ex-Maury fortified wine casks from the Roussillon region of southern France, using 19 Maury butts filled in 2021 and vatted to produce approximately 15,000 bottles. Bottled at 50% ABV without chill filtration or added color, it typically retails for around $93.50.

  • On the palate, the musty damp wood and bitter tannins return first. These give way to molasses and liquorice leading sour cherries and orange zest. There is underlying earthy peat throughout.
