The distilling process releases crayfish oil, which enhances the gin's smoothness, according to the producers. Kennet Crayfish Company, the U.K.’s largest licensed processor of wild American signal crayfish, sustainably manages the invasive species from the River Kennet in Berkshire. Smaller crayfish are used for products like animal feed, while larger ones are distributed as food. The gin supports conservation efforts by reducing the population of this invasive species, which damages river ecosystems.
