Kanosuke Hioki Pot Still is a single grain Japanese whisky made from unmalted and malted barley using shochu techniques in Hioki's stainless steel pot still and aged in ex-bourbon barrels and new American oak barrels. It is bottled at 51% ABV and sells for around $110.
It’s equally light on the tongue, though the fruitier notes seen on the nose fade into a more grain-heavy experience, though it’s still very clean and ephemeral — leaning again into those perfumed notes, which give it a heady, vaporous quality. The light whiskey effect is strongest on the finish, which is sharp and sugar cookie-sweet, showing off final notes of almond extract and lemon cookies.
A drier character on the tongue with a somewhat prickly bite at the top of the palate. An edging sweetness does come out to play after several seconds at the front of the mouth. Medium body and a long finish ending with a curious saline note
