Kaiyo "The Kuri" whisky, part of the Ariake Wood Collection, was released in 2021. Aged in Japanese kuri wood, a subspecies of chestnut, it undergoes a unique finishing process. After 7 years of aging in Japan, the barrels are sent to sea for 3 months, a tradition followed by all of Kaiyo's whiskies. Once returned to Japan, it's bottled at 46% ABV.
