Ilegal Mezcal Añejo is crafted in small batches by fourth-generation mezcaleros in the Santiago Matatlán Valley, Oaxaca, Mexico. Made from 100% espadín agave, it is distilled twice and aged for 13 months in a combination of new and used American oak barrels with a medium char, sourced from Kelvin Cooperage.
The barrel aging contributes lovely aromas of honey and vanilla, which are echoed on the palate, along with a surprising flowery note, a suggestion of smoke and a spiced finish.
This more mature version adds a touch of honeyed sweetness, and the smokiness also starts to veer toward the toasty sweet side, heading close to vanilla and milk chocolate territory.
