This ready-to-drink cocktail is a collaboration between Hoste and bartender Pablo Jiménez. It's made from Paquera’s Artisanal Ensamble Mezcal (distilled in Oaxaca by Juan Hernandez), mole bitters, a custom sweet vermouth blend by Little City Vermouth nd a tamarind liqueur developed by Hoste. An orange zest atomizer comes with this 750-milliliter bottle, which retails for $80. The mezcal is distilled from Barril and Espadin Agave. The sweet vermouth is made with cayuga white grapes, Vietnamese cinnamon, cascara bark, sarsaparilla, eucalyptus, orange peel, hibiscus and vanilla. The tamarind liqueur is infused with tamarind, hibiscus, orange peel, rhubarb root, ceylon cinnnamon, cinchona bark, cardamom, coriander, gentian, ginger, Mexican oregano, thyme, sage and rosemary. The mole bitters feature chilhuacle negro chile, chile mulato, pasilla de Oaxaca chiles, cacao, plantains, sesame seeds, peanuts, almonds, raisins, ceylon cinnamon and clove. Finally, the orange zest is made from valencia, blood and navel oranges.

Mezcal dominates the nose, blasting your nostrils with smoke and iodine. The vermouth is certainly present, too, following soon after the impact of the mezcal settles down. Notes of cinnamon and vanilla linger in the background.
This is a very well balanced cocktail! The mezcal announces its presence loudly but doesn't shut out the vermouth, which holds its own with sweet, anise-forward character. The mole bitters enhance the experience. Some lemon-lime notes are in the mix, too.
The finish is smoky, warming and long, leaving you with a wonderful mix of mezcal and vermouth.
