The Holladay Ancient Cave Collection is a limited, distillery-exclusive series of secondary-finished straight bourbons produced at Holladay Distillery in Weston, Missouri. Master Distiller Kyle Merklein takes 6-to-7-year-old Soft Red Wheat bourbon and re-barrels it in the distillery's historic 1837 cave using experimental wood types, toasting methods and smoking techniques. The collection is bottled at 100 proof (50% ABV) and sells for around $45 for a 375ml bottle.
