Based on an 18th-century recipe, this Old Tom-style gin is produced by Iceland-based Himbrimi Distillery using locally sourced wild arctic thyme, angelica flowers and mountain honey. Himbrimi Old Tom Gin rests at 40% ABV and retails for around $70 per 750 ml bottle; however, it's not an easy gin to find here in the U.S.
While I have a great love for this gin, I’m not sure it’s really one that can be called Old Tom gin, but I’d really call it more of a modern gin. It’s certainly one of the more unique gins in the world, and for that reason alone I’d recommend it.
Himbrimi I would say is closer to a gin amaro than it is an Old Tom. But categories aside, it’s an unusual direction in gin that’s unlike anything else out there right now.
