High Wire Distilling New Southern Revival Bourbon is distilled from Jimmy Red corn, an heirloom variety rescued from near extinction by Ted Chewning. Received in early 2014, High Wire Distilling grew 2.5 acres of this corn in partnership with Clemson University. The bourbon, produced in South Carolina, is aged for a minimum of two years.
The good parts about this release solidify my belief that flavorful grains could make for a more flavorful whiskey, and I look forward to tasting more from High Wire Distilling Company.
