Henri Bardouin Pastis comes from Distilleries et Domaines de Provence in France, where distilled spirits are macerated with over 65 botanicals, including licorice, star anise, grains of paradise, cardamom and tonka beans. The company, established in 1898, bottles this pastis at 45% ABV. It retails for around $35.
The licorice/aniseed combo is still there on the back end, but as it diminishes there are traces of lemon and black pepper which keep things interesting. Quite the treat to celebrate summer’s ending.
We like the soft herbality and warm sweetness of the liqueur. Considering that there are over five dozen ingredients, the end result is clean and refreshing.
