Gin Thuya is a London dry-inspired gin produced by Distillery Fils du Roy, the first distillery in the Acadia region, using traditional pot stills. Made from corn alcohol, it is redistilled with Thuja occidentalis, or young cedar shoots harvested in Saint-Arsène, Quebec, along with juniper berries and botanicals such as coriander. Bottled at 45% ABV, it delivers a distinctly pine-forward, forest-like profile. Available in a 750 ml formats, it typically retails for about $30.
