This gin comes to us from Freeland Spirits, a women-owned and operated Portland distillery. Drawing inspiration from the Forest Park, an expansive urban forest reserve located five blocks away from Freeland Spirits Distillery, Forest Gin is made with ingredients that grow right in the spirit producer's backyard woods: chanterelle mushrooms, Douglas fir tips, salal berries and nettle, oh my!
The gin has a lovely, oily mouthfeel that is most enjoyable when sipped neat, and I recommend trying it that way, but I found that it reaches its absolute best in a Gibson or a dirty martini where the earthy notes can take center stage and really shine: deep, savory, and delicious.
