Distilled, probably, by Valentin Celis in Zimatlan, Oaxaca, this expression bottled by In Situ features Penca Verde. Distilled using clay after clay pot fermentation, this should have no lack of flavor.
Incredible and complex, my notes only read 'bonkers' from my second tasting for this review. This is the real deal, and while you pay for it, it's worth it.

House Review
Nose:
Wow - sweet and lactic on the nose. Savory and almost game-y with notes like garlic, beef, red licorice and pepper. So much savory character here that blends nicely with a light rock candy sugar, hint of lactic fruits.
Taste:
Sweet on the palate, creamy and berry forward at first before a tan of beef bouillon, onion, soil and ash arrive.
Finish:
Long finish with plenty of clay, honey, a pop of pepper and honey. Light raspberry before some cocktail onion. Lovely.
Overall:
