Estancia's limited seasonal Raicilla Pechuga is made by Maestro raicillero Alfredo Salvatierra. The process involves roasting maximiliana agave in an adobe oven, fermenting it in clay amphora pots and distilling it twice in copper pot stills. A third distillation includes local ingredients such as pumpkin seeds, quince, apple, plum, lemon leaves, toasted almonds and raw turkey breast. The final spirit has an ABV of 48%.
