Estancia Raicilla is crafted from Agave maximiliana, roasted for two days in an adobe oven to activate natural sugars. After crushing, the agave is slowly fermented using wild airborne yeast and mineral-rich water from a natural spring in the volcanic ridge above the distillery. Fermentation occurs in old Jack Daniel's whiskey barrels, and the raicilla is double-distilled in copper alembic stills.
