El Jolgorio Sierrudo Mezcal, part of the El Jolgorio Special Release series, is produced in Oaxaca, Mexico, by legendary mezcalero Don José Cortés. Sierrudo is a sub-variety of Agave americana, related to arroqueño and coyote, and matures in 13-15 years. The agave, cultivated in a wild environment in Agua del Guaje, San Pedro Lachigoba, San Carlos Yautepec, grows large, with piñas averaging 230 kg. A high concentration of sugars allows each agave to yield 20-25 bottles of mezcal, according to the brand.
