Produced in San Carlos Yautepec, Oaxaca, El Buho Extra Añejo is a mezcal distilled by maestro mezcalero Octavio Jimenez Monterroza using espadín agave. The agave is cooked in a stone oven for about six days, mashed with a horse-drawn tahona and fermented with wild yeast in pine vats for eight days. Double distilled in copper stills, the spirit was aged in French oak barrels for six years. It rests at 47% ABV.
