El Buho Ensamble Mezcal is produced in San Pablo Huixtepec, Oaxaca, using a blend of four agave types: 25% Arroqueño, 25% Coyote, 25% Barril and 25% Cuishe. The agaves are cooked together for seven days in a stone oven, fermented for seven days in pine vats with wild yeast and distilled twice in copper stills. The mezcal is aged for seven months in stainless steel and bottled at 50% ABV. Produced by Maestro Mezcalero Octavio Jimenez Mendez.
