Collaborating with Heriot Watt University’s Centre for Brewing & Distillation, Head Distiller David Wilkinson from Edinburgh Distillery in Scotland characterizes Seaside Gin as the most delicate variant within the brand's London Dry range. This expression aims to capture the essence of the shoreline near Edinburgh by utilizing botanicals foraged from local beaches, including bladderwrack and scurvy grass.

Bright and expressive, very reminiscent of the classic gin. Not a ton of “seaside” on the nose, which I am pretty alright with.
The palate is totally different, however. Tons of pepper, juniper, a sort of kelpie sushi wrap note sans rice, lemon grass, creamy sweetness and a pop of pepper.
Short finish, a little acrid and bitter. It’s not wildly briny or seaside-y to me, but it reminds me of the classic with a touch of kelp and a hint of extra pepper and bitterness.
This release is good, fine, not exceptional, but I recognize that it also took restraint to make sure this wasn’t a vegetal monster.
