Edinburgh Rhubarb & Ginger Liqueur is produced by Edinburgh Gin at the Edinburgh Gin Distillery in Scotland. It is made by macerating locally sourced rhubarb, ginger and lemon zest in a gin base and is bottled at 20% ABV.
This bottle of Edinburgh Rhubarb and Ginger Liqueur really exceeded my expectations, and I think it is one of my favorite liqueurs, out of the spirits I’ve reviewed so far in 2025. The rhubarb notes are delicious, and the liqueur as a whole feels unique and special.
It’s a bit of a wild ride but not without some charm. Best used sparingly in a cocktail for a unique layer of flavor or cut with a generous amount of mixer for an easy spritz.
