Dolin Rouge Vermouth is produced in Chambéry, France, using a base of Ugni Blanc wine and a blend of 30 to 40 botanicals, including coriander, hyssop, rhubarb and curaçao. Bottled at 16% ABV, it typically retails for about $20.
A historic brand dating to 1821, Dolin follows the traditional Chambéry style, which received the only Appellation d’Origine for vermouth in 1932. This red vermouth is lighter and drier than many in the category, with its color derived from the botanicals rather than a red wine base.
French, the color of weak tea. A more demure style of vermouth, with a black cherry-like sourness that’s complemented by notes of rhubarb and a touch of coffee bean. Ruddy and a bit muddy on the finish, with a very mild bitterness to it.
Gentle cinnamon notes make an appearance as well. As you move to taste it, the vermouth is medium-full and soft on the palate. It is more tart than sweet and not terribly bitter.
