Doc Swinson's Forest & Fable (Exploratory Cask Garryana) is a straight bourbon whiskey finished in Garryana oak casks. Sourced from MGP, it blends two mashbills: one with 60% corn, 36% rye and 4% malted barley, and another with 75% corn, 21% rye and 4% malted barley. Initially aged 5 years 10 months in 200-liter American oak barrels with a char #4 level, it then spent 2.5 months in 350-liter Garryana oak casks. Native to the Pacific Northwest, Garryana oak is rare in whiskey maturation due to its difficulty in coopering. Bottled at 108.8 proof, this is a limited release.

- Fortunately some sweetness manages to push past this initial rush of moodiness, and the palate brightens up, blending umami notes with prominent baked apples, sesame cookies, and gingersnaps. A little clove-heavy on the finish, but it’s otherwise clean and lively. Quite a journey.
