Delamain Vesper Grande Champagne Cognac, produced by Delamain Cognac, is an XO expression made from eaux-de-vie sourced from Grande Champagne. Aged around 35 years, it matured in Limousin oak casks for at least 10 years. Bottled at 40% ABV, it retails for about $175 for a 750ml bottle.
On the palate, this Cognac is light and silky, almost featherweight. The flavor is similarly light, mostly showing on the exhale as cinnamon spice, almond, drying oak and a hint of apple freshness.
The flavors consist of maple, candy apple, lemon peel, fresh figs and burnt sugar. An intense but fairly approachable XO cognac with all of the density and depth you would expect.
