Pale & Dry XO was created in 1920 by Jacques and Robert Delamain. It is made exclusively from eaux-de-vie from Grande Champagne and aged in 350-liter Limousin oak barrels. The cognac is produced without added sugar or coloring and is aged in cellars along the Charente River. The ABV is reduced to 42%.
The palate is similar, but has an integrated spice factor that matches the level of the fruit. As the name states, the finish is dry but not overtly tannic and tight.
The palate is light and soft, with delicate hints of cedar, almond and golden raisin yielding to a briskly spiced finish accented with lemon and grapefruit peel.
