Del Maguey San Pablo Ameyaltepec Mezcal is produced in Oaxaca by mezcalero Aurelio Gonzalez Tobon. The mezcal is made from semi-wild papalote agave roasted in a conical pit, fermented with airborne yeast and distilled twice in a clay still with bamboo tubing.
