This is an espadin pechuga from Del Maguey, Lot PEC-191. This expression is produced in Santa Catarina Minas, Oaxaca, Mexico, by Florencio Carlos Sarmiento, Florencio Carlos Vasquez, Luis Carlos Vasquez and Luis Carlos Martinez. It starts with double-distilled Minero mezcal and undergoes a third distillation with a chicken breast suspended in the clay still. The mezcal is made from espadín agave and has an ABV of 49%.

  • A lot of good stuff going on here--peppery cinnamon in the form of red hots, along with cloves, star anise and cedar. A most elegant and complex mezcal with the smoke taking a back seat. Lots of sweetness to balance out the 49% alcohol makes it almost easy to drink.

    Cream cheese, honey, toffee, almond, dank truffle and blue cheese. Rich, savory, complex.

  • Taste:

    Sweet, rich and creamy mouth feel. Ethanol in check. Blue cheese, funky and meaty. Pepper, clove, savory poultry. Sweet, funky.

  • Finish:

    Short, clean, funky and sweet. Wisps away with pepper, clay, blue cheese and olive juice.

  • Overall:

    Earthy and mineral forward. Delightful in every sense.
