Creyente Mezcal Espadín is crafted by mezcaleros Pedro Mateo and Mijail Zarate, who blend two espadín mezcals from the regions of Tlacolula and Yautepec in Oaxaca, Mexico. The process begins with removing the leaves from the piñas hearts, which are then roasted for three days in a stone oven using mesquite wood. The roasted piñas are ground by hand with a stone mill, fermented in wooden barrels and distilled in small copper stills. After distillation, the two mezcals are blended and cut with spring water.
