Corzo Tequila Reposado is produced at Bacardi y Compañia in the southern Los Altos region of Jalisco, Mexico. The agave is cooked in autoclaves after diffuser extraction, then fermented without fibers in stainless steel tanks. Distillation occurs three times in stainless steel pot stills with copper coils. The tequila is then aged in French oak barrels and bottled at 40% ABV.
I am a big fan of this expression of Corzo Tequila. The spirit is complex and full of herbaceaous agave flavour. Although the tequila carries its share of spicy pepper, the honey-like sweetness and light oak spice which accompanies this pepper makes sipping a real treat.
Touches of serrano and Szechuan pepper lend to a very interesting and delightful finish and mouthfeel. Adding salt allows the tequila to open up florally like found in their Silver version.
