This special-edition bottling from Convite is distilled using Espadin agaves that are cooked in an underground oven, ground by tahona and fermented in wooden vats. Between the first and second round of distillation, local ingredients including apples, pears, tejocotes, pineapples and creole turkey breast are added to the still.

  • Nose:

    A bouquet of freshly picked herbs and spices lingers across the aroma. Anise, baked apples. tons of mint, cardamom, coriander and a flash of spicy ginger. Everything feels precise and recognizable, as if the ingredients had been added to the batch only moments before I cracked open the bottle.

  • Taste:

    Cardamom quickly emerges as the dominant flavor, sinking into the palate with a cooling bite halfway between eucalyptus and pine needles. Hints of lemon zest, quince, pineapple and white pepper add a welcome splash of the tropics. It's an effective if unexpected combo. The overall impression leans low smoke, moderate agave and high mint.

  • Finish:

    The cooling bite of cardamom and eucalyptus carries through in full force, peaking on the backend alongside hints of minerality, thyme and agave nectar.

  • Overall:

    The botanical influences are strong with this one, more so than any other mezcal de pechuga I've tasted. It's as if an herby digestif had been mixed with a quality Espadin. Though it doesn't even vaguely resemble what I was expecting to taste from the product description, the end result is all the more unique. Easy to imagine gin and sotol enjoyers falling in love with this bottling.
