Produced in Oaxaca, Mexico, Convite Coyote is made with wild maguey coyote agave that matures for 12 years. The production involves cooking the agave in an underground pit oven, milling with a horse-drawn tahona, natural fermentation with spring water and double distillation in a copper alembic still.
