Clairin Le Rocher is an unaged, single pot still rum bottled at still proof without dilution by La Maison & Velier. It is produced at Romulus Bethel’s distillery in Haiti using slowly boiled sugarcane syrup from three cane varieties. About 30% dunder from previous batches is added during distillation.

  • By going to a lower ABV, by taming a remarkable panoply of potent and pungent smells and tastes, by changing (slightly) the way it’s made, the Le Rocher is setting a standard as high as its creole-still cousins, and if your tastes bend in this direction, it’s definitely worth adding to your collection of whites, and clairins.
