Released in September 2023, Chicken Cock Red Stave is a Kentucky straight bourbon finished in Petite Sirah barrels from California vineyard J. Wilkes. The bottle comes housed in a tin — a nod to Chicken Cock's storied roots based in Prohibition, when the brand's whiskey was smuggled in tin cans to speakeasies like the Cotton Club.
It doesn’t blow my mind as I find the barrel finish on this to be a little off center in consideration to typical bourbon flavors one hopes for when they pop a bottle. Still, it is a solid offering for those looking for something a little different in this whiskey category.
Really enjoyable combination here between the base whiskey, the wine finish and a pleasant tannin structure from top to bottom. Easily the best Chicken Cock whiskey of late to cross this desk.

House Review
Nose:
Sweet on the nose with honey, char, a touch of baking spice and red berries. Soft but enticing, sweet and jammy with a wallop of baking spice.
Taste:
Pleasant on the palate. The moderate mouthfeel that winds together baking spice, cocoa, honey, vanilla bean, toffee and more red berries. A touch of heat but pleasant viscosity. Really easy drinking.
Finish:
Long finish, full of toffee, root beer, light oak and more red fruits.
Overall:
Really enjoyable combination here between the base whiskey, the wine finish and a pleasant tannin structure from top to bottom. Easily the best Chicken Cock whiskey of late to cross this desk.
