Cazcanes No. 9 Blanco, distilled at Tequilera TAP in Jalisco, Mexico, embraces a "boutique-style" approach to handcrafted tequila production. Utilizing water from Navichi springs and 100% Weber Blue agave, the tequila undergoes fermentation with natural wild yeast, followed by distillation in alembic stills. It is then bottled at 100 proof.

  • Nose:

Minerality and vegetal notes take center stage. The nose is reminiscent of smelling the roots of a plant freshly ripped from the ground. Orange rind, rose petals, mint, black pepper and a hint of slate mingle for a welcoming fragrance. Roasted agave makes its presence known but is far from overpowering.

  • Taste:

Wonderful herbed flavors of rosemary and anise, plenty more roasted agave and lingering brininess/salinity. Sweeter citrus notes take a back seat to a big hit of earth, which pairs well with an creamy mouthfeel that coats the palate.

  • Finish:

Long, warm finish punctuated by a distinct floral note, ground pepper and a smidge of ethanol.

  • Overall:

The bump to 50% ABV brings out gobs of nuance within the palate, hitting a great balance between tried-and-true agave flavor and more subtle vegetal notes. Were I to borrow language from the wine world, I'd say that terroir is the star of the show, and certainly for all the right reasons.
