Catedral De Mi Padre Tobalá Mezcal is made by Master Mezcalero Celestino, a fourth-generation mezcalero, at his family-owned palenque in Oaxaca, Mexico. It is crafted from 6- to 12-year-old tobalá agave. Each bottle includes a QR code linking to video interviews with the mezcalero.

Bright, sweet and a little meaty. You get some confectioners sugar, mango, blueberries, leather and ash. Behind it all is a lingering touch of cold cuts I'd liken to prosciutto.
If the nose was bright and sweet, then the palate is sweet and funky. Tropical fruits and orange rind play ball against an almost savory, umami flavor defined by blue cheese, ash and tobacco. Make no mistake, sugared fruit is still the dominant note. An interesting balance here with both sides pulled off quite well.
A prick of ethanol on the backend rounds out a long, smoky finish. There's some vegetal hints here alongside black pepper.
Really fun stuff. Tobalas are a great way to explore the depth of the mezcal category, and Catedral definitely understood the assignment. Sure, there's a underlying savory presence, but not enough so that I wouldn't recommend it to skeptics hoping to broaden their horizon.
