Carrera Tequila Blanco Still Strength is produced in Arandas, Los Altos de Jalisco, using blue weber agave grown in red soil rich in calcium, manganese, potassium and iron. Agave maturity and total reducing sugars are verified before harvest. The piƱas are steam-cooked in brick ovens for 23 hours and rested for another 23. Cooked agave is crushed using a five-step roller mill to extract the juice. Fermentation lasts about 72 hours with proprietary yeast. The mosto is then double distilled, beginning with the ordinario. The final product rests unaged at 108 proof.
