Camazotz Oaxacan Rum Aguardiente de Caña is made from sugarcane grown in the Sierra Mixe, about five hours northeast of Oaxaca City. The hand-pressed cane juice is fermented in open barrels with wild airborne yeasts. Distilled to proof in small batches of up to 300 liters using an alembic copper pot still, the rum is then transported by mules up the mountainside. Bottled unaged with no additives, it is 48% ABV and available for around $57.99.
