Cachasol is a brand new name in the tequila scene with a few less-than-regular flourishes under the hood. Brought to market by 5th-generation master distiller Jimmy Villalobos Sauza (of Sauza family fame) and industry regular James Montero (veteran of Don Julio, Jose Cuervo, Dogfish Head Brewing), this is an additive-free tequila distilled using India Pale Ale yeast. Lowlands agaves are cooked via autoclave, extracted with a roller mill and twice distilled. This is the brand's extravagantly titled "Epic Strength," bottled at 48% ABV.

A garden patch of buttery, herbal aromas brings to mind mint, basil, raw agave and dilly beans. Super green and crunchy with just the right amount of white vinegar funk. Doubling back on a second whiff, I can't shake the pickle comparison.
Roasted agave, white pepper, tarragon, okra, artichoke and a bit of black licorice sweetness. This one is for the greenery lovers through and through. The mouthfeel is fantastic, packing in a creamy sweetness that balances out all those vegetal vibes.
Drawn out finish peppered with licorice, minerality, dark chocolate shavings, wet grass and agave. A subtly sweet butterscotch note begins to rear its head.
It's hard to identify where the IPA influences end and the agave begins. However you spin it, this is fantastic tequila, and a must-buy for anyone who loves high-proof blancos or abundantly terroir-forward spirits. It hones in on a very specific flavor profile and perfects it, splicing in all sorts of unexpected herbal and vegetal notes right at home within the tequila vernacular. Hats off to Jimmy Sauza for a great twist on an established concept.
